1. Place tofu cubes in Corningware or Tupperware container and
cover with marinade. Put in the refrigerator, covered.
2. Soak skewers.
3. Wash and prepare vegetables.
4. Thread vegetables onto skewers.
5. Place basil
leaves next to tomatoes and mint leaves wrapped around zucchini slices.
6. Serve over bed of brown or white basmati rice.
7. If desired, use
marinade, further diluted, as sauce. Other vegetables can be included in
these kebabs, depending on what is in season.
