Vegetable and Herb Kebabs
with Marinated Tofu

Ingredients

Marinade for Tofu: (Do This First!) 

Combine: 

  • 1/2 cup low-sodium Tamari

  • 1/2 cup filtered water

  • 1/2 cup Newman's Own Olive Oil & Vinegar Dressing (Ed. Note: or make your own)

Next, the Kebab Ingredients:

  • 8 wooden skewers (soaked in water for 1 hour)

  • 24 button mushrooms or portabello chunks

  • 16 cherry tomatoes

  • 16 large basil leaves

  • 16 thick slices of zucchini

  • 16 large mint leaves

  • 16 squares of sweet red pepper

  • 1 pound extra firm tofu cut into approx. 1-1/2" cubes

Method

1.  Place tofu cubes in Corningware or Tupperware container and cover with marinade. Put in the refrigerator, covered. 

2.  Soak skewers.

3.  Wash and prepare vegetables. 

4.  Thread vegetables onto skewers. 

5.  Place basil leaves next to tomatoes and mint leaves wrapped around zucchini slices.

6.  Serve over bed of brown or white basmati rice. 

7.  If desired, use marinade, further diluted, as sauce. Other vegetables can be included in these kebabs, depending on what is in season.
