Tofu Quiche

THE CRUST (optional)

Mix together in a medium bowl

  • 35 Saltine crackers, crushed

  • 1/4 - 1/2 cup melted butter

Press into a 9-inch spring form pan.

Chill until needed.

THE FILLING     

Mix in a blender until smooth

  • 1/2 cup milk

  • 3 eggs

  • 1 1/2 lbs. soft tofu

  • 3 tbs. flour

  • 2 tbs. onion powder

  • 1 tsp. salt

  • 1 tsp. Worcestershire sauce

  • 1/4 tsp. pepper or cayenne

Add and mix in well with a long-handled spoon

  • 2 cups grated Swiss cheese

Turn into the prepared crust or a 9-inch oiled casserole

Bake at 350° for 1 hour.
