Zingy Gazpacho Soup

Ingredients

3 cups tomato juice

3 fresh Roma tomatoes, peeled
and diced

1 cucumber, diced

1 bell pepper, 1/2 grated, 1/2
minced

1 Tablespoon parsley, minced
fresh

1 Tablespoon apple cider vinegar
-
Juice of 1/2 lemon
-
1 clove garlic, finely minced
-
Sea salt to taste
Method
Mix well. Chill one hour before
serving.
