Zingy Gazpacho Soup

   PREPARATION TIME: 10 minutes

   CHILL FOR: 1 hour

   SERVES: 6

Ingredients

  • 3 cups tomato juice

  • 3 fresh Roma tomatoes, peeled and diced

  • 1 cucumber, diced

  • 1 bell pepper, 1/2 grated, 1/2 minced

  • 1 Tablespoon parsley, minced fresh

  • 1 Tablespoon apple cider vinegar

  • Juice of 1/2 lemon

  • 1 clove garlic, finely minced

  • Sea salt to taste

Method  

       Mix well. Chill one hour before serving.
