California Salsa

Ingredients

  • 2 cups peeled and chopped tomatoes

  • 1 celery stalk, cut up

  • 1 onion, cut up

  • 1 green bell pepper, cut up

  • 1 1/2 teaspoons salt

  • 1 tablespoon cider vinegar

  • 1 tablespoon sugar

  • 1 green chile pepper, seeded, if desired, and chopped

Method

  1. In a food processor, combine all the ingredients and process until well blended. 
  2. If a finer texture is desired, pass the ingredients through a food mill using a fine blade. 
  3. Transfer to a bowl, cover tightly and chill overnight before serving.

Makes about 2 cups.
