Green Goodness Salad
with Herb Dressing
Chef Elieth Ameni Harris has developed and written
recipes specifically for arthritis sufferers so that they can begin to eat
healthfully without sacrificing flavor. This recipe eliminates foods that
aggravate or escalate arthritis symptoms, particularly the common culprits
such as eggs, dairy, wheat, or fried foods. These recipes are quite tasty
and healthy, whether or not you have arthritis.
Ingredients
-
1 bunch romaine lettuce, broken into pieces
-
1 bunch arugula, chopped
-
2 bunches watercress, leaves only
-
1 bunch Swiss chard or spinach
-
1 medium endive, diced
-
1 bunch scallion, chopped
-
4 sheets
toasted nori seaweed, cut into strips
-
1/2 cup roasted pumpkin seeds
-
1 pack sunflower sprouts
Method
In a large salad bowl, combine all of the
ingredients, except nori and roasted pumpkin seeds. Mix well and set
aside. Serve salad with herb dressing (see below); sprinkle seeds and
nori strips on top.
Herb Dressing
-
1/2 cup extra virgin olive oil, flaxseed oil, or
hemp seed oil
-
1/4 cup lemon juice (may use vinegar if not
allergic to yeast)
-
1 tbsp prepared mustard
-
1 tsp dried tarragon
-
2 tsp chopped fresh chives
-
1/4 cup Bragg's Liquid Aminos
Method
Combine all ingredients in a blender except the
chives. Stir in chives afterwards.
