Nori Condiment

Here's a simple and extremely tasty use for wild nori that comes from an East-West Foundation cooking class in Boston. A little of this goes a long way. Exact quantities are left up to you to play with.

Ingredients

  • 1 cup nori 
  • 1/2 cup soy sauce 
  • 1/2 cup water 
  • 3 drops rice mirin (optional)

Method

1. Soak nori until limp and chop.

2. Cover in saucepan with a mixture of soy sauce and water.

3. Simmer covered until all liquid is absorbed or evaporated (approx. 1-1/2 hours). Be careful not to burn.

4. Add a few drops of rice mirin to enrich flavor.

5. Store in refrigerator in covered jar. Will last several weeks. Serve a little with grains and veggies or use it to flavor a spread, soup or salad dressing.
