Potato Pie
Potato pie
is a great recipe to play with. You can use any vegetables you have
handy, even leftovers. You can also use fresh herbs. Baking times may
vary so check for tenderness.
Ingredients

3 medium potatoes, thinly sliced

2 medium carrots, grated
-
3 green onions, chopped,
including green tops
-
1 cup chicken broth
(Editor's Note: or vegetable broth)

2 tablespoons chopped parsley
Method
1. Preheat oven to 350°F
2. Arrange 2 layers of potatoes around a 9-inch pie
or quiche pan that has been sprayed with a nonstick coating. Spread the
carrots and onions over the potatoes. Layer the remaining potatoes on top.
3. Pour the chicken broth over the top, cover, and
bake 1 hour.
4. Uncover and sprinkle parsley over the top. Bake,
uncovered, 10 to 15 minutes.
5. Let stand 10 minutes, then cut into pie-shaped
wedges.
