Oven French Fries

Here is a healthy way to enjoy those forbidden French fries. You can add variety by using different herbs or seasonings. For spicy fries, add cayenne pepper or crushed chili pepper. You may also use a flavor-infused olive oil.

Ingredients

  • 3 large russets, about 1½ pounds

  • 2 teaspoons olive oil

  • ½  teaspoon salt

  • ¼ teaspoon paprika

  • Freshly ground black pepper

Method

  1. Preheat oven to 450°F.

  2. Coat a baking sheet with nonstick spray.

  3. Cut potatoes into strips (use a mandoline if you have one).

  4. In a large bowl combine olive oil, salt, paprika, and pepper.

  5. Add potatoes and toss to coat.

  6. Spread the potatoes on a baking sheet and roast about 20 minutes.

  7. Loosen and turn the potatoes.

  8. Roast 10 to 15 minutes longer or until golden brown.

Servings: 4
