Shepherd's Pie With Dulse

Here's another old favorite converted by Wendy without exact quantities, allowing you to use your creativity.

Ingredients

  • 6 potatoes

  • 1/2 oz. dulse

  • soy margarine or butter

  • soy milk or milk

  • fresh black pepper

  • 1 lb. tofu

  • oil and onion

  • nori or Nori Granules Sea Seasonings

  • mushrooms

  • garlic powder, nutritional yeast

  • soy sauce or miso

Method

1. Cook 6 potatoes with 1/2 oz. dulse until tender.

2. Drain and mash with soy margarine and milk and pepper. Set aside.

3. Sauté onion, nori, mushrooms, and mashed tofu until brown.

4. Add fresh pepper, garlic powder, nutritional yeast, soy sauce or miso, and remove from heat.

5. Layer a casserole dish with the tofu mix, perhaps tomato sauce or a layer of fresh sliced tomatoes and finally the mashed potatoes.

6. Bake at 375° F till brown on top (20-30 minutes) 

Serves 6.
