Potato
With Caramelized Onions
Ingredients
- 1 lb. potatoes
- 2 medium onions
- 2 Tbsp. chopped fresh parsley
- 1 Tbsp.
extra virgin olive oil
- salt pepper
Method
1. Peel the potatoes and cut into quarters. Boil the potatoes in salted
water for about 20 minutes or until done.
2. Peel and cut the onions in half and slice thinly. Heat the olive oil in a
skillet over medium high heat. Sauté the onions until translucent, lower
the heat to medium and continue to sauté until the onions become
caramelized (this may take 20-30 minutes). Be careful to stir the
onions constantly so that they don't burn.
3. Drain the potatoes and put them into a large bowl. Chop the caramelized
onions coarsely and add to the potatoes. Add the chopped parsley, salt and
pepper and mash all of the ingredients with a potato masher. Set aside to
cool.
