Pecan Loaf

Ingredients

  • 1/4 cup of sunflower or sesame seeds
  • 2/3 cup of whole wheat flour
  • 1 cup of pecans
  • 2 cups of cooked brown rice
  • 4 cups of bread crumbs
  • 1 tsp salt (optional)

Method

1.  Grind the pecans in a blender or food processor to make meal. Remove and place in a large bowl. Blend the bread crumbs in the blender or food processor. Add the bread crumbs and the rice to the ground pecans in the bowl.

2.  Blend all the remaining ingredients in the blender until smooth. Combine with the pecan nut and rice mixture. Press the mixture into a well-oiled loaf pan. Bake for 45 minutes in a oven preheated to 350 degrees. The raw mixture can also be used to form meat balls or patties that can be baked in the oven. Serve with homemade tomato sauce or ketchup on top.
