Soy Whipped Cream

Ingredients

  • 3/4 c. Soy milk (Eden Soy) 
  • 2 Tbs. honey 
  • 1/4-1/2 tsp. vanilla 
  • Pinch of salt (optional) 
  • 3/4 c. soy, corn, or safflower oil 
  • 1/8-1/4 tsp. lemon juice

Method

  1. Blend first four ingredients on high for 5-10 seconds. 
  2. Slowly dribble in oil, blending for an additional full minute after all the oil has been added. 
  3. Stop blender and fold in lemon juice. 
  4. Put into covered container and chill. 

Yield: 2 cups
