Ginger Spice
Cake
This is an old-fashioned
gingerbread-style cake.

Method
-
Heat oven to 350o.
-
Butter the bottom and sides of
an 8-inch square baking dish.
-
In a large bowl, mix together
hot water, molasses, and brown sugar.

Stir in ginger, cinnamon,
nutmeg, cloves and melted butter.

Stir in eggs and mix well.
-
In another bowl, stir together
flour, salt, baking powder and baking soda.

Add flour mixture to wet
ingredients and mix thoroughly.
-
Pour batter into prepared dish
and bake for 20 to 25 minutes.

Let cool slightly before
cutting into squares.
Serves 10-12.
